Crispy Carrot chips Daughter approval- 2 thumbs up Dear Husband approval-2 thumbs up I found this interesting recipe on Pinterest one day while trying to find healthy recipes that my daughter might like. One of the only veggies she will eat are carrots, but she normally only likes them raw. But, these were crunchy like chips, and had a bit of spray oil, curry, and salt, which she loves, so I thought she might give it a go. Result- both she and Dear Husband ate them all before I could even finish the second batch. Definitely 2 thumbs up. I added curry, which the original recipe did not call for, and I think it worked out well. Only problem with this one is that it is a bit fiddly to make, and a bit time consuming by the time you peel the carrots. Recipe: (Australian temperatures used) 4 carrots (or however many you are willing to peel) curry powder salt garlic powder spray oil Line a baking tray with baking paper. Preheat over to 180C. Peel carrots so you have lots of skinny strips of carrot. Place in a bowl and toss through curry powder, salt and garlic powder (to taste). Place each strip of carrot on the baking tray without putting any on top of each other. The ends can touch, but dont put them on top of each other, otherwise they dont cook properly. Place in oven and cook for approximately 10-12 minutes (or until slightly browned and crispy). Allow to cool on cooling rack for approximately 5 minutes. Eat immediately, or store in airtight container.
