Crispy Fried Chicken Ingredients Wet Batter 1 ½ C all-purpose flour 1 C cornstarch 1 egg, beaten 1 ½ Tbsp ground black pepper 1 tsp paprika 1 tsp cayenne pepper 1 tsp garlic powder 1 tsp onion powder 1 tsp poultry seasoning 2 tsp baking powder 1 tsp salt, plus more to taste 1 ¾ C cold water Dry Batter 1 ½ C flour 1 tsp garlic salt ½ tsp poultry seasoning 1 ½ tsp pepper 1 ½ tsp paprika 1 ½ lbs chicken, (I used 3 boneless skinless breasts that I cut into strips but you can use your preferred pieces) Oil, for frying (I used Crisco butter flavored shortening as I didn’t have vegetable oil on hand) Directions Allow the chicken to brine in salt water for about an hour. This helps keep it moist! After brining, discard liquid and pat chicken dry. Combine the wet ingredients in the order listed so to blend the flavors well. Be sure to mix well because you don’t want clumps in the batter. Once combined, chill it in the refrigerator for about an hour. I added my chicken breast strips to the wet batter as it chilled. Combine dry batter ingredients making sure to use a dish large enough to dip chicken in. In a large skillet or Dutch oven, heat oil to 350° F (176° C). Dip chicken in dry batter, then wet batter, then dry batter again. Make sure to let the wet batter drip back into the bowl before dipping into dry batter, otherwise your dry batter isn’t going to stay dry long! Add chicken to oil. Reduce heat to bring oil temperature down to about 325° F (163°C). Cooking time will vary depending on the cut. I cooked each piece about 5-6 minutes on each side. Larger pieces will need to cook longer. You want the outside to be golden brown and the inside temperature to register at 160°F/71°C (175°F/79°C for dark meat) on your meat thermometer. Remove from oil and allow the excess oil to drain. I used a plate with paper towels on it then added pieces to a foil lined baking sheet so keep warm in the oven (husband was running about 30 minutes late from work). Serve warm!
