DESIGNER COOKIES Ingredients : Maida 1 1/2 cups (200gm) , baking soda 1/2 tsp , castor sugar 1/2 cup ( 100gm) , butter 100 gm ( soft , at room temperature ) egg 1 or 1 egg yolk ( whole egg causes more eggy smell ) vanilla essence 1/4 tsp Method : swift maida n baking soda together n keep aside . Cream together butter n castor sugar . Add egg n essence . Beat well . Add maida n knead lightly . Cover it with cling film n keep refrigerated for 2-3 hrs . After then remove cling film . If the dough seems to hard add 1-2 tbsp of cold milk and knead slightly . Roll it lightly on a floured surface to a thickness of 1/4 inch . Cut out into desired shapes using different cutter of your choice . Place the cookies to a baking tray . Now again place this tray in fridge for 10-15 minutes for chilling . This will prevents the cookies from loosing their shape . Now bake at 180c in a preheated oven for 10-12 minutes or until the edges starting to brown . Remove from the oven and let the cookies cool on a baking tray for few minutes & then transfer to wire rack for cooling . Store it in air tight containers . If using royal icing make sure that cookies are completely cool before icing . ROYAL ICING Ingredients : egg whites 3 , icing sugar 6 cups sifted , glycerine 1 1/2 tsp , lemon juice 1/4 tsp , colour n essence as required Method : Put egg whites in a large dry bowl and whisk slightly . Gradually add icing sugar to make it shiny and white . It should be thin enough to spread n thick enough to hold its shape . Add glycerine n lemon juice . Mix it well . Divide royal icing into small bowls . Now add colours of your choice . Fill in piping bags . Cut away a small tip from the edge n use writing nozzle for smooth flow of icing . Now make a steady n smooth outline of the cookie . Fill it with royal icing of your choice . Let it dry completely before storing . It takes around 2-4 hours or more for completely drying . Its shelf life is 10-12 days with proper wrapping n store it in fridge in an air tight container . Enjoy 😊😊😊
