DOUBLE LAYERED STEAMED RICE PAN CAKE. Ingredients 2 cups good quality biryani rice 3 tbsp. cooked par boiled rice 1 cup thick coconut milk 7 shallots 2 tsp. cumin seed Salt to taste 2 tbsp melted ghee METHOD Wash and soak biryani rice for 8 hours. Grind it with cooked rice, shallots, cumin seed, and coconut milk. Batter should be in pouring consistency. You can add water if it is too thick. Divide the batter in to two. In one portion add a drop of red food color and the other portion leave it plain. Heat steamer. Take a round or square serving dish and spread ghee on it .Pour one ladle of plain batter in dish and place in steamer .Close the lid and cook for 3-4 minute .Open the lid and spread ½ tsp. of ghee on it Then add one ladle of pink batter and cook for 3 minutes more. Then spread ghee and repeat till it covers the dish. Finally close the lid and cook for 10-15minute.Cut it into small pieces and serve with mutton or chicken curry.
