Delish lemon & coconut protein balls 3 cups of coconut protein 1.5 cups dedicated coconut 2 cups almond meal 6 dates 1.5 cups oat bran 1 cup LSA (linseed, sunflower seed, almond meal) 1 cup water 1 tsp coconut sugar 1 tsp vanilla essence 1 tbs coconut oil 1/4 cup macadamia nuts chopped rough. 2 lemons Method Mix all dry ingredients into a bowl. Grate the zest of both the lemons. Rub the dates through the dry ingredients to make a crumb like mixture. Add the vanilla and lemon juice and mix through. Add the coconut oil and macadamia nuts and mix. Add the water at 50ml at a time mixing well at each addition. Once the mix starts coming together stop the addition of water. If you squeeze the mix and it holds together you dont need anymore water if its not holding together on its own add another 50ml and try again. Once your happy roll into balls and roll in extra coconut. Store in the fridge, the will last for about two weeks. Otherwise you could keep in the freezer for about 2-3 months easily.
