Diane Roode Hancox Huletts SUGALITE Diabetic BUTTERMILK WHOLE WHEAT RUSKS 50g Low Fat Margarine 45ml (3T) Oil 250ml (170g) Sugalite 1 Large Egg 375ml (1&1/2cups) Buttermilk 125ml (1/2cup) Whole Wheat Flour 375ml (1&1/2cups) All Bran Flakes 500g Cake Flour, sifted 20ml (4t) Baking Powder 2.5ml (1/2t) Salt Melt the margarine, oil and Sugalite in one large saucepan and allow to cool. Beat until well combined. Beat in the eggs, then beat in the buttermilk. Add all the dry ingredients and stir until blended. Pour the mixture into a loaf tin. Bake in a preheated oven at 180C for 30 minutes Turn out, and leave to cool. Cut into rusks. All to dry overnight in the oven warmer draw or switch the oven to 100C and leave for 4 - 6 hours to dry completely. Stor in an airtight container. MAKES 30 Rusks Elmarie
