DAVE SWEET POTATO CAKE~ Named in honor of Deborahs grandfather who was a MISSISSIPPI sweet potato farmer. • In a large bowl combine • 1 cup butter • 2 cups powder sugar • 1/2 cup sugar Blend until creamy •add 3 large eggs one at a time • 3 cups flour 1 half at a time • 2 leave teaspoon baking powder • 1 teaspoon salt •1/2 teaspoon cream of tartar • stir • a hand full of butterscotch morsel • 1 cup golden raisins • 2 cups of cooked and puréed or of finely creamed sweet potatoes * NOTE add a small amount milk butter cinnamon and sugar to your purée this will help add that extra yummy flavor to your cake stir using a large spoon Once batter is smooth pour batter into 3 9 by 5 cake pans that have been lightly oiled and floured * NOTE you may want to add additional raisins nutmeg or cinnamon to the top of your batter before placing in oven Place in a 350 degree per~heated oven bake for 1 hour 10 minutes turn off oven let cakes rest for 15 minutes the cake should be golden brown always check the center of your cake with a tooth pick the tooth pick should be clean *NOTE once you remove your cake from the oven allow it to completely cool before removing it from the cake pan this cake is so moist you dont want to crumble the cake!
