Dinner on #day81of100vegan simply had to have a Mediterranean twist to it - all week Ive been craving various foods and ingredients from my favorite cousine! (My vegan challenge officially became challenging from about 75 days, the list of things I miss and cant wait to have again has increased massively!). No time for shopping again so had to use what I had. And what a gorgeous meal it was considering I was using up loose ends to create it! Couscous: made with vegetable stock, raisins and toasted pine nuts. Veg: onion, garlic, pepper, sweet potato, carrot, tinned tomatoes with basil and other herbs, salt. Served with fresh salad. Thats one more page for my recipe book I think:)
