Dinner tonight... Homemade Lentil and Kale soup 291 calories 22 g of protein 37% of your daily need of iron 1040 mg of potassium Good for building muscle, muscle recovery and just damn tasty Soups are great and easy throw in your favorite veggies, greens and a protein source and go like hell!!! ***Recipe Added*** 4 kale leaves chopped 1/2 yellow onion diced 5 cloves chopped garlic 2 cups dry lentils 5 stalks celery chopped 1 red bell pepper chopped 1 tomato diced 1 tsp creole seasoning 1 tbsp olive oil 1 tbsp better than bouillon vegetable base 1 tsp oregano 2 tsp black pepper Salt to taste Soak lentils for 4 or 5 hours before beginning soup. Add oil to a stock pot on medium heat...add onion, celery, red pepper and garlic, cook on medium heat until onions are translucent. Add chopped kale and saute for 4 to 5 minutes or until it begins to wilt. Add 10 cups of water and vegetable base and stir to combine. At this point you can quickly combine your remaining ingredients...tomato, pepper, creole seasoning and oregano and reduce heat to low. Cover amd simmer for at 90 minutes (this is a good one for the crockpot also). Add salt to taste and serve Makes 6 large servings
