Dinner tonight...... Loaded Potato and Chicken Casserole 4 russet potatoes, cleaned and cubed (I also skinned them because Kerry doesnt like the skins) 1 lb boneless, skinless chicken breasts, cubed 1 1/2 cups shredded cheddar cheese 4 slices of bacon, cooked and crumbled 4 green onions, chopped fine 1/2 cup heavy cream 2 Tbls butter, cut into pieces Layer one half of the potates on the bottom, in a small casserole dish (I used a 9 1/2 inch glass pie plate). Place the diced chicken pieces on top of the potatoes. Sprinkle with salt and pepper. Sprinkle 1/2 of the bacon on top, then 1/2 of the shredded cheese and 1/2 of the green onions, Add final layer of potatoes, bacon, green onions and cheddar cheese. Sprinkle lightly with salt and pepper. Pour 1/2 cup heavy cream over the top and dot with butter pieces. Bake covered with foil for 1 hour at 350 degrees F. Remove foil and back another 30 minutes, or until potatoes are fork tender. *********Changes that I will make next time*********** I will not put heavy cream on it. I will wait until it is cooked and dollop sour cream on top. I will also omit the butter pieces. I do not feel they are necessary. I hope yall enjoy
