Discovered a great thing at the Outer Banks. A little seafood market up in Duck had these great Tomato Pies, theirs was pre-cooked so all you had to do was put it in the oven for 30 minutes to brown up. I am trying to make it today, I looked up Paula Deens recipe and it only used 2 cheeses. I chose to use several different cheeses and put spinach and chives in mine to make it more like the ones from the Market. It take three stages, one you make it, two you bake it for 20 minutes, then you let is set. Then you rebake and let it bubble and brown. Hope these turn out as good as the ones from Duck NC.
