Due to popular demand yesterday during the Premier Pairing, we are revealing our Maiden Voyage pairing recipe for Lemon Smoked Trout Pate. You have this gorgeous day to visit and taste it yourself. 1lb smoked trout fillets 1lb cream cheese half bunch parsley (about a 1/2 cup) 1 red onion zest and juice of 2 lemons salt and pepper Prep: In a food processor mince onion, parsley and zest of lemons. Remove skins from trout fillets and discard. Add trout meat to processor and finely mince making sure that no large chunks remain. Put mixture in a mixing bowl. Add cream cheese to processor and blend until smooth. Add cream cheese and lemon juice to trout mixture and mix until thoroughly incorporated. Season with salt and pepper. Enjoy with a bottle of Maiden Voyage. (thanks to Gabriel Romero for this recipe and pairing)
