I thought I would share a SHORT HISTORY of BISCOTTI The Italian, the word biscotto means biscuit or cookie. More specifically, biscotti are named according to their original method of baking. The root words bis and cotto literally mean twice and baked. When Italians first created biscotti in the region of Tuscany many centuries ago, They needed something the Roman Army could take with them and eat along the way to war. These biscotti were hard, dry and brittle - baked to last for many months. They were careful to bake the cookies twice, in order to form their unique shape and allow the cookies to develop their signature crisp texture. Over the years, these methods became standard practice. Bakers shape the dough into a log, bake it, evenly slice it into cookies (hopefully without crumbling), and then toast and turn the cookies again until they are perfect. Since not many of us march off to war any longer - the biscotti has evolved - we now add such things as chocolate, cranberries, almonds, hazelnuts, pine nuts...the only limit is our own imagination. The Last Handmade...Biscotti are made to order and contain organic and Australian products. Most of my ingredients are purchased at Terra Madre and are certified organic. The Almonds are from Aintree Farm Organics in Cobram, Maria Rich brings them down for me - thank you . The walnuts are from Alpine Nuts -Walnuts from Victorias High Country which Fiona and Lyn Robertson own. We will be in Eltham at the Eltham produce and craft market on 21 September.
