Dug out a piece of frozen red snapper...and found a Paula Deen recipe. Melt butter (or olive oil for a healthier version). Add crushed garlic, chives, parsley, a few drops of Worchteshire sauce, Cajun seasoning (I used EmerilsEssence), and pepper. Brush filets with mixture, then add bread crumbs (I used Panko crumbs) to what is left. Spread herb seasoned crumbs onto filets and bake at 400 degrees for 12 - 15 minutes or until fish flakes....oh my! This is a keeper.
