Dum Biryani... Ingredients chicken 1 k.g. basmati rice 2 cups (coffee mugs) sliced onion 1-1/2 cups oil 1/2 cup yoghurt 250 gms. ginger garlic paste 2 tsp turmeric powder 1/2 tsp chilli powder 1 tsp (less or more) mint leaves few green chillies 2-3 (roughly chopped) green coriander leaves (chopped) 1/4 bunch bay leaves 1-2 cinnamon stick 1-2 cumin seeds 1 tsp cloves 4-5 whole black pepper 5-6 salt as required freshly ground garam masala ( take 1 tsp of cumin seeds, 3-4 cloves, 5-6 black pepper, 1/2 nutmeg, 1 tsp almost mace, 1 star anise (badyan) 1/2 inch stick of cinnamon, make a fine powder out of it) saffron few strands kewra water few drops (optional) Method : heat oil fry sliced onion till golden brown,take them out and keep aside. marinade chicken in a open mouthed pan with whisked yoghurt, ginger garlic paste, roughly chopped chillies, chilli powder,some salt, turmeric powder half fried onion, freshly ground garam masala, mint leaves, coriander leaves and 3-4 tbsp of oil from the pan (which I used for onion) mix well and leave for half an hour now cook on low heat for 7-8 minutes. soak rice in water for 1/2 an hour (1 hour for sela basmati) now boil the rice with 2-3 tsp of salt (plz check the salt) cumin seeds, black pepper, cloves,cinnamon sticks, bay leaves, boil till 50 to 60 percent is done. strain the rice in a colander and make half cooked rice layer over chicken, sprinkle some more mint leaves, remaining fried onion, (dilute saffron in 1/4 cup of luke warm milk and pour over the rice,kewra water (optional) sprinkle some more milk, remaining oil. seal the pots lid with flour dough tightly n cook for 5 minutes on medium heat, shift the pot to the tava and cook on a very low heat for 30-40 minutes or till done
