Dutch Baby at Christmas, using the much-loved recipe from my mom. Let 1/2 a stick of butter bubble in the pan. Add 2 sliced apples and let them brown. Pour in the simple mix of 1/2 c flour, 1/2 c milk and 2 eggs. It is required that all gather to admire the Dutch Baby when it comes out of the oven, lightly golden; risen like a quotidian miracle. Served with real maple syrup, it sings in the mouth, but the truth is, when plated and served, that soufflé has settled, its fleeting moment passed.
