Easy as pie lemon curd, 3 eggs, 1 cup sugar, 13 cup lemon juice, 14 cup butter, Whisk eggs, sugar, and lemon juice together in double boiler over simmering water until mixed well, then continue to stir until thick, about 7 to 10 minutes. drain through mesh to get rid of the lumps. Fold in butter until incorporated chill in fridge till it has thickened, enjoy over pound cake or sponge cake. you can use twinkies which makes a very cheap and great desert!
