Enchilada Casserole: 1lb ground meat 12pk red corn tortillas 1 lg can(15oz) red mild enchilada sauce 1/2 c chopped onion 1 sm can diced green chilis 1 sm can chopped black olives 1 sm pkg sour cream 1 can corn 1 pkg taco seasoning (mild for kids) 1 pkg shredded cheese (I use the Mexican blend but it doesnt matter) Brown hamburger w/onion & season with salt, pepper, garlic. After its cooked drain and add taco seasoning following the pkg directions. Then add corn, enchilada sauce, 1/2 can of chilis & 1/2 can blk olives and mix together. Then in a small baking dish layer corn tortillas w/meat mixture & cheese. Spread remaining cheese all over top (use the whole pkg) bake in oven uncovered for 20min @ 350. When you serve it add a dollup of daisy if you like and some guac or avacado slices :o) Sooooo good.
