Ever heard of CAZUZZA SQUASH? Our neighbor gave us 2 yesterday that they had grown in their garden. I looked it up online. Its typically an Italian squash. After reading several recipes, I came up with something on my own using what I had already in my kitchen. Ill call it CAZUZZA SQUASH & CHICKEN CACCIATORE (even though it doesnt have any wine in it). Heres a link about cazuzza squash: specialtyproduce/produce/Cucuzza_Squash_856.php And then my recipe that I created: - 1 chopped onion - 3 cloves garlic, minced - 1 choopped orange bell pepper (its all I had) - 2 cups cazuzza squash, cut in bite-sized chunks - 2 cans of organic diced tomatoes w/ Italian seasoning - approx. 1 cup organic chicken stock - 1 bay leaf - 1/2 tsp dried parsley - 1/2 tsp dried oregano - 1/2 tsp dried basil - freshly ground pepper & sea salt to taste - shredded rotisserie chicken - severed over organic egg noodles Coat large skillet w/ spray (I use olive oil in a Misto sprayer). Heat to med-high. Saute onion & pepper for until almost soft - then add minced garlic & saute for another minute, stirring often. Then add the squash, salt & pepper. After a few minutes, add 2 cans of tomatoes (undrained), basil, oregano, parsley & bay leaf. Saute for about 10min or so until squash is soft. Add chicken stock & turn heat to low. I shredded a rotisserie chicken that I had already purchased & had in the fridge, then added the meat to the squash mixture. Meanwhile, cook egg noodles according to package directions. Drain noodles when they are ready, & place in serving dish. Top with squash mixture. Sprinkle with shredded parmesan cheese. The squash mixture makes about 5 servings, I guess. I have no idea of the nutritional value. It was delicious!!!!
