Every now and then the boss will let me cook. I enjoy cooking. If I have a specialty it would be breakfast meals, but I am also the head chili and soup maker in the family. Yesterday she had me up for making a big pot of vegetable soup. As far as my recipe for vegetable soup is concerned, I am a man with a can, and a plan. For our soup pot I get three or four cans of mixed vegetables, two cans of diced potatoes, one large can of crushed tomatoes, two cans of cooked chicken, minced onions, minced, garlic, and salt and pepper to taste. I know all you good cooks out there are scoffing at my can plan, but it does make a nice hot bowl of soup when all cans and ingredients are combined, stirred and allowed to simmer on the top of the stove for about an hour and a half. Well yesterday, I got out all my cans and started fixing my vegetable soup. When I got to the cans of potatoes, I opened the first one, drained some of the water out, took the lid off and noticed green things mixed it with the potatoes. What in the world? I looked at the label and it said DICED in large letters, skin-on yellow in small letters, POTATOES in large letters, with jalapeno. What? Who the devil thought putting jalapenos in diced potatoes was a good idea? My old system can no longer tolerate very spicy things. I guess I am to blame. I am the one who picked up the cans. I thought I could maybe pick the peppers out of the potatoes and wash them off, but I washed one off and ate it and that would have not worked for me. Oh well we had vegetable soup without potatoes. It was still pretty good and we have leftovers for lunch today. Excellent! I hope you have a wonderful day today. Enjoy this beautiful Sunday.
