Experiment with effect of lievito madre in my usual fruit loaf. Except I used 20% LM whereas I normally use 30% levain in this bread. Darn. Should have stuck with 30% leavening. No difference in results between this and the levain one, apart from the fact that managed to botch this batch with undercooking - damp spot in the bottom centre. I did check internal temperatures - and it did take longer than normal to get to 98C. Should have stuck to a higher temperature at the start. Anyway, toasting will fix that.
