Experimental Recipe- veggie lasagna For those of you who know us there are a few things that are 100% truths about the Fullmer family- #1 we get excited when new stuff shows up at Costco. #2 we cook for a small army. #3 I usually wing it recipe wise. So Im sharing this one because it came out AWESOME! I found spagetti squash at Costco- 2 decent sized ones for about $6. Heres what I did: Cut both squash in half, heavy drizzle of Butter Olive Oil and light sprinkle of garlic salt. Bake at 375 for 70 minutes. Let the squash cool for about 20 minutes after the oven then shred with a fork into a big bowl. More Butter Olive Oil and garlic salt. Spread into a deep 9 X 13 pan. Spread/mix a package of cream cheese (we used new Greek stuff) into the spagetti squash. I put about half of that big tub of cottage cheese in as well (you could use ricotta but its a little salty for me). We used Garlic olive oil to saute a red, orange and yellow bell pepper, large white onion and a large pack of sliced mushrooms in a pan. I was lazy and used a large (think Costco) sized jar of spagetti sauce to the veggies. I spread it over the top and covered it with a large pack of shredded mozzarella cheese. Returned to the oven at 375 for 20 minutes (just to melt the cheese). Served with slices of everything baguettes and green salad. I have three teenagers and they DEMOLISHED IT. So. Good.
