Experimental fish night in the Fortunato home. Baked version of fried calamari with a balsamic glaze. We also tried cod 2 different ways. 1 with ranch and dill. The other with grilled scallions and garlic with Calamata olives . Not crazy about rhe cod texture but preferred it with the olives. Also tried swaii filet with olive oil lemon drizzle and a sprinkle of panko. Loved it. Not a pretty presentation but managed to get it all on the table between running my son around with winter workouts, lacrosse and signing him up for his driving lessons today. Kale salad I made was amazing and calamari came out great! Brocolli..well..is brocolli..lol
