Experimentation update: Witchwood. This is turning out to be far too bitter, so tonight, Ill be diluting it with basic mead liquor to test different strengths. Melissa. This has reached 16% abv but Ill run it on to 18%. It tastes amazing, with hints of pepper and citrus. I think is needs more herb next time, though. Blueberry. Very dry tasting despite still having lots of sugars in the liquor. I dont intend to be offering this as a commercial mead, having found it being done by one of our competitors. 18.5% Lavender. This is nearly ready for bottling and is to be used as tasters. Its good! Raspberry leaf. Now racking (clearing) ready for bottling. Next up: Yule Mead: Im making some changes to this recipe, having just bought a very expensive, secret ingredient all the way from the Middle East. I cant wait to try it. Cladonia Rangifera. Inspired by Norwegian aquavit, Ill be harvesting some reindeer moss to try out. Getting all shamanistic, now.
