Farm Intern Arien here! This past holiday season I was lucky enough to get three cookbooks about nose-to-tail eating, and I am definitely inspired. Like John Deck said in his blog post, eating more of the animals we raise is kinder to our wallets and to the environment--plus, of course, most organs are incredibly nutritious and tasty. So I wanted to ask--how do you feel about offal and odd bits? Are you interested in trying them, but not sure where to start? Love them and wish we carried more?
