Feature Friday: “Raising buffalo is nothing like raising cattle.” John Heer, a sales and marketing representative for Intermountain Bison of Idaho, speaks in a low, no-nonsense tone, with the utmost respect in his voice, when speaking of the company’s prize crop. “Buffalo are very strong. Explosively fast and smart. They know they could kill you. Cows don’t know that. The fences must be higher and double reinforced.” Intermountain Bison, owned by Golden Valley Natural Meat Snacks, has grown its brood to over 1,500 since inception five years ago. Golden Valley Natural, an all-natural jerky company started to feel the heat from increased beef prices, and looked to buy its own herd of buffalo to cut costs. The investment proved successful as it provides meat for many restaurants, shops and companies including the Jackson Hole Buffalo Meat (thisbuiltamerica/Wyoming). “Buffalo is only available in the U.S. and Canada,” Heer said. “It is just a small group of ranchers compared to the beef industry. And our customers will order every month without worrying about supply or price.” Ranchers raise the bison in a pristine, comfortable environment. They are accustomed to crisp, clean air, wide, open spaces and never receive artificial hormones. The calm, healthy life yields a product revered by its loyal customers.
