Final instructions for your own homemade, really yummy, full of pro-biotics, and sooooo much cheaper plain or vanilla greek yogurt: One half gallon whole milk (regular is fine, I havent tried it with raw milk yet) 1/2 C plain, live culture, natural yogurt (youll use your own after this batch) crockpot cheesecloth or cotton fabric (old t shirt) to strain metal strainer or colander 1. Pour all the milk in the crockpot, set it to low and put the lid on. (If youre making this vanilla yogurt, then add 1/2 C sugar or honey and 1 tsp vanilla. Stir.) Walk away for 2 1/2 hours. 2. Unplug the crockpot. Dont lift the lid. Leave it alone. Walk away for 3 hours. (Set out the 1/2 C of yogurt on the counter.) 3. Ladle out about two cups of the warm milk and whisk in the 1/2 C yogurt. Pour it back into the crockpot, put the lid on and let it yogue for 8 hours by: Setting it outside in the sun on a warm day. Putting it under the comforter on your bed. Putting it into your oven with the oven light on. Put it anywhere in your house thats nice and warm. You can wrap a blanket or fluffy towel around it. 4. In 8 hours (or less) it will have congealed to a big mass. You can chill it at this point and eat it as regular yogurt - or you can line a strainer or colander with a cheesecloth or piece of cotton fabric and let it drain in the refrigerator. The longer it drains, the thicker it gets, so check in a couple of hours. If you leave it for 8 to 10 hours, it will be as thick as cream cheese! (also delicious). 5. When its reached the consistency you like, transfer it into a container with a lid and let everyone eat! You just made a quart of yogurt for about $1. Save the whey to put into your daily green smoothie! Nicely done.
