Tiramisu: Combine 12 egg yolks with 1 1/2 cups of sugar, whisk until bright yellow in color and smooth Add 3 lbs of Mascarpone cheese, (Italian cream cheese), and whisk until combined, and smooth Whip 3 cups of heavy cream until stiff peaks form, and add it to the mascarpone mixture Using a hand mixer, blend until completely combined and smooth Make a pot of espresso, in your drip coffee maker is fine, and combine that with 3 ounces of brandy, coffee liqueur or amaretto Dip lady fingers, individually, in espresso, and make a single layer in the bottom of your hotel pan Add half of the mascarpone mixture and, using a rubber spatula, smooth the layer until even Repeat another layer of lady fingers dipped in the espresso, and spread out your second layer of mascarpone Sprinkle the top with cocoa powder and refrigerate for 24 hours. Cut into 24 pieces and serve
