First attempt at the 3 ingredient Christmas Cake and have surprised myself! 1 kg mixed fruit 800mls Chocolate milk 2 1/2 cups self raising flour Soak fruit overnight in the fridge then add flour. I used a 6.5L SC with a silicone mini muffin tray in the bottom with a little water. The small ones are made in little glass moulds and the bigger ones were made in a silicone mould from the big cupcake moulds. Decorated with white chocolate, Jaffas and mint leaves but you could use whatever is available in red/green. Cooked for 2 hours with a tea towel under the lid.
