Food Tech. Funda # 3 - Effect of pH on the growth of microorganism in the food ( THE BOSS & EMPLOYEE CONCEPT ) - by me :- The pH of food sample is just like a boss and microorganisms are just like employs in the office , now its not necessary that one will get good boss ( favorable pH ) but every employ will have grow maximum in presence of boss that will have peculiar factor e.g. a corrupt in the presence of corrupt one and the honest in the presence of honest one (optimum pH ). To simplify it let me put example, fungi can tolerate low pH whereas proteolytic bacteria will be favored by alkaline pH. Now the reaction of emloyee will also depend on his nature ( type of organism and its physiological characteristics etc e.g leakage in some cells due high pH and hence death of the cells) and also on what he aspires from his job ( what changes it will induce to food e.g acid former will produce acid that will further increase acidity which may or may not not be tolerated by m/o producing it or decrease in acidity due to proteolysis by bacteria in milk which will further promote its growth)
