For Christmas we went away for three days to a self-catered cottage. In our haste to leave we forgot both the olive oil and the butter. Fortunately, our first dinner was Duck Confit. Thus the rest of the menu: Breakfast 1: Scrambled eggs in duckfat. Dinner 2: Lemon risotto with seafood seared in duckfat. Breakfast 2: Lemon risotto cakes fried in duckfat. Dinner 3: Steak with mushroom sauce (shallots and mushrooms sautéed in duckfat), with duckfat Brussels sprouts. Breakfast 3: Ham and eggs fried in duckfat. Tonight we are cooking something in olive oil.
