For about a year now, I have been dehydrating different items from my garden. It started with herbs I was hanging in my kitchen. When they got profuse and overwhelming, I crushed them into pieces to store in jars - at least it was neater. At some point, I started running them through my flour sifter and an obsession was born. Mint, basil, garlic, onion, celery leaves, cilantro and peppers all found their way into my sifter. Its like having your own instant tea, soup or sauce! Cilantro is one of my favorites, the thick stems that are woody when fresh are just as tasty when powdered. Tomato skins that I used to give to the chickens are now used to flavor soups. Dips! any combination, just mix with sour cream. I keep a dehydrator tray in my seed starting rack in the corner of my kitchen.....scraps of onions, celery tops, any leftover fresh herb or vegetable matter are laid out to dry. Don’t even plug it in, just use the tray to keep off dust and insects and as storage until you have time to deal with them. Orange, lemon and lime peals add incredible flavor to tea or sauce, add lemon to a cream sauce for hollandaise or orange to a simple syrup for orange glaze. My Mother loves lime salt. For the tougher chunks or skins; I found a blender bottom fits a regular mason jar. I just add bits of dried whatever until I get a full jar and whir in the blender. Its an obsession. Poor chickens.
