So moist and delicious- it tastes like banana bread in cookie form! BANANA COOKIES 1-1/2 cups flour 1 cup sugar 1/2 tsp Baking Soda 1/2 tsp salt 1/4 tsp nutmeg 3/4 tsp cinnamon 3/4 cup shortening 2 bananas-mashed 1 egg 1 3/4 cup quick oats 1 cup pecans(optional) 1. Preheat oven to 400 F 2. sift dry ingredients together 3. Once dry ingredients are sifted, cut in shortening 4. After shortening is completely cut in, add bananas, eggs, and oats and blend together well. Put in pecans, optional 5. Spoon drops onto cookie sheet and bake at 400 F for 8-10 minutes (Note: this is a lot softer than normal cookie dough and will not form balls, hence spoon “drops”) FROSTING 1/2 cup (1 stick) butter, softened 3 Tbsp. milk 2 tsp. vanilla 1 box (16 oz.) powdered sugar You can add more milk or powdered sugar to get it to the consistency you want it.
