For the Knaufer’s in the crowd Potato salad served at Arron’s party yesterday 2 pounds potatoes, about 6 to 7 medium sized ones 4 eggs Clean the potatoes but do not peal. Place in large pot to boil with the eggs. Cover and boil. Chop up about 12 oz of veggies. I used; Onions Celery Red and Green Bell Peppers 2 large Pickles If you are lazy you can buy this mix in the freezer section of the grocery. 1 ½ cup of mayonnaise (miracle whip works well) 1 tablespoon mustard, French’s yellow 1 tablespoon apple vinegar , regular is fine too 1 teaspoon of salt ¼ teaspoon of pepper 2 tablespoons of Parsley flakes Mix these 6 ingredients together to make the dressing When potatoes are soft, remove pot from heat. Peal potatoes and roughly dice. Remove eggshells and roughly dice the hard boiled eggs. Mix all veggies together before adding dressing. Refrigerate for at least 2 hours. Use the leftover skins, shells, and stalks in your garden
