For the past three weeks I have been slowly trying to move towards veganism, for ethical reasons. (Please, no debates; this is something I am doing for me.) Its something I have known I should try to do for 30 years, in order to be consistent with my beliefs, and have made mild attempts at it in the past. My wonderful partner, Rachel, is helping by trying to adapt to cooking us meals with tofu instead of meat, even though I am in no way pressuring her to be vegan. (I have told her: go ahead and cook with meat if you like; I can just substitute some precooked mock duck in my portion when it is served.) I have already cut my meat consumption in half. Now I have discovered two excellent milk substitutes: Silk Light Vanilla Soy Milk (a good source of protein) and Blue Diamond Almond Breeze Unsweetened Almond Coconut Milk. There is often a $1 off coupon for these in the Sunday newspaper. Also, they have a much longer shelf life than dairy milk, so if theyre on sale you can stock up a bit (they do require refrigeration).
