For those who liked my recent post about making English muffin pics bites, and would like to make them yourself, I present to you, for your culinary pleasure: Jonathan Falkners Pizza Bites Difficulty: easy Total Time to Make: 25 minutes Kitchen Tools Needed: Toaster Oven Sharp Knife Aluminum foil Ingredients: - 1 roma tomato - two pinches of garlic - two pinches of oregano - 2 dashes of crushed red pepper (optional) - enough sweet basil leaves to cover half of one side of the English muffin (or substitute two dashes of dried basil) - two dashes of dried parmesan cheese power - a tiny bit of extra virgin olive oil - 6 pepperoni slices Prep: Cut or tear an English muffin in half (I prefer tearing) and put in toaster oven face up on top rack, toast on highest setting for 10 minutes or until slightly browned on top. While the English muffin toasts, slice one roma tomato into 8 slices. Eat the top and bottom ends/slices, leaving 6 remaining :-) Set the tomato slices into two groups of three, and evenly spice each group with a pinch of garlic and a pinch of oregano, and sprinkle a dash of parmesan cheese onto each. Break the fresh basil into small pieces and evenly distribute onto all six tomato slices. The toaster oven should have binged by now, so bring the English muffin out, place them onto the aluminum foil, and place each group of roma tomato slices onto each English muffin half, covering both halves. Drizzle extra virgin olive oil onto both halves, but be very sparing (no more than a teaspoon in total between the two halves, probably less). If desired, add a dash of crushed red pepper to each half. Place a slice of pepperoni onto each tomato slice, and then cover each English muffin half in mozzarella cheese. Toast on highest setting for an additional 10 minutes or until the cheese is browned. While the cheese melts and browns, clean up all ingredients and put away spices. When the cheese is browned, remove and transfer to a plate, and throw out foil. All cleaned up and ready to eat! Eat as soon as it is safe to eat, as it tastes best piping hot!
