Fried Chicken Tenders 02/05/2014 0 Comments This recipe has 2 different variations. Buffalo chicken tenders and coconut chicken tenders. Or you can just make them plain without the coconut and buffalo sauce. Ingredients: 3 lbs. chicken breasts, cut in thirds to make tenders 3 eggs, whisked 2 cups flour 1 cup panko bread crumbs 1 cup seasoned breadcrumbs 1 cup unsweetened shredded coconut 1 stick of butter 1 cup hot sauce (or more depending on how hot you want it) salt and pepper oil for frying Instructions: 1.Pre-heat oven to 200° to keep chicken warm while frying in batches. Add about 1 of oil to a large pan and heat to medium. 2.To make your breading station have three separate bowls, one each for flour, eggs , and breadcrumbs. If you are making coconut chicken add the coconut to the breadcrumbs. If you are making plain or buffalo dont add the coconut. 3.Start by seasoning your chicken liberally with salt and pepper. Im not a fan of putting the salt and pepper in the flour or eggs, it just doesnt seem to work the same. 4.Dredge the chicken in batches starting with flour, then eggs, then breadcrumbs. 5.Fry in the oil for about 3- 4 minutes per side or until golden brown. Arrange on a cooling rack on top of a baking sheet and place in the oven. 6.To make buffalo chicken tenders, in a small sauce pan add the butter and hot sauce. Once melted and combined transfer to a bowl and toss the fried chicken tenders in the sauce. Serve with blue cheese dressing. 7.For the coconut tenders serve alongside homemade honey mustard dipping sauce. Enjoy!
