Friends dont let friends waste money on fancy pants fermentation kits. This might be a little controversial, but I want to put it out there... All you need is a fido jar. You dont need an airlock - the lid of the fido jar does what an airlock does anyway (keeps out oxygen, allows carbon dioxide to escape). And you dont need packaged starter culture either - theres plenty of lactobacillus living on your veg anyway, that will grow rapidly in the right conditions without any help from packaged starters. Fermentation doesnt have to be expensive at all (but that being said, dont use cheap screw-top jars like mason jars). And no, I dont get paid to promote Fido jars (I wish!). I just love the jars, use them myself for all my ferments after experimenting with other jars to varying degrees of success and failure, and Im a passionate advocate for not letting people get ripped off. I couldnt NOT say anything about this, especially after seeing the price tag on these kits.
