From garden to table in 60 minutes! If you didnt harvest your sweet potatoes, they have probably already started sprouting in the soil. However, if you have a bunch freshly harvested, make this delicious bake. Line a baking dish with sliced sweet potatoes, sprinkle chopped sage on top, then cover them with sliced onions followed by chopped Warrigal greens mixed with a pressed clove of garlic. Put small cubes of fetta on the onions - instead of fetta you may want to pour eggs beaten with chopped shallots. Top with another layer of sweet potato slices, 45 minutes in the oven and voila! What was in the soil one hour ago is now on the table ready to be eaten. You cannot get fresher food than that!
