Fruit Meets Fire Peaches and nectarines are in season! They are perfect for grilling…and it could not be any easier. Simply slice the fruit in half, and remove the pit. Place over medium-high heat and grill for 2 minutes on each side. That is just the basic technique, which will give you delicious flavor. But the options for adding additional flavor are endless! Here are some of my favorite ways to enjoy these summertime treats; Brushed with a Raspberry Sauce, and tossed into a salad; Just puree fresh or frozen raspberries in the food processer, add in honey to taste. That’s it! Brush it on the fruit while grilling, and once it is on your plate. For a side dish or even a light main dish, slice the fruit after removing it from the grill and toss it with your favorite salad mix, basil, arugula, mozzarella or goat cheese, and toasted walnuts. Drizzle with your favorite balsamic dressing, or try this one; 8 tbsp Walnut Oil 1 tbsp diced shallot 1 tbsp Dijon mustard 2 tbsp red wine vinegar 1/4 tsp sea salt 1/4 tsp fresh cracked black pepper 1 tsp honey Instructions: Combine all ingredients in a small bowl.
