Fruit Spring Rolls *Makes 12 Rolls* Ingredients: • 1/2 lb. tofu, firm • 1 banana • 1/2 apple, sliced • 12 spring roll wrappers • 2 large strawberries, chopped • Agave nectar (optional) Dipping Sauce: • 1-2 tbsp. peanut butter and/or vegan chocolate chips • 1/4 cup nondairy milk Instructions: 1. Press tofu, then cut block into 4 slabs, then each slab into 3 pieces to make 12 sticks total. 2. Cut banana in half, then slice halves lengthwise. Slice each quarter into 3 trips for 12 slices total. 3. Slice apple into 1/8- to 1/4-inch-wide strips. 4. Fill dish or pan with about 1/4-inch of water (enough to cover 1 wrapper). Place one wrapper in cold water for 30-40 seconds (or follow package directions). Gently take wrapper out of water dish and let water drain off. 5. Place wrapper on a flat surface. Place 1 stick of tofu, 1 slice of banana, and a few slices of strawberry and apple in the center of the wrapper. 6. Drizzle agave on top, if using. 7. Fold bottom of wrapper over fillings. Pick up one side and fold it over and repeat with the other side. Roll wrapper all the way to the top. 8. Repeat with remaining ingredients. 9. Make Dipping Sauce(s): Warm 1-2 tbsp. peanut butter in the microwave for a few seconds (for PB sauce) or melt vegan chocolate chips, then whisk in nondairy milk to achieve sauce consistency.
