Game meat; my perspective: Game meat including deer, rabbit, squirrel, fowl, beaver...etc are often unappreciated and undervalued due to a long history of being perceived as poor meat. Nobody would eat these lesser meats if they were able to buy the carefully packaged farmed options. In an effort to encourage acceptance they were often, and still are, cited as being akin in taste with mainstream options. Seriously, it tastes like beef or its just like chicken followed with recipes that would encourage the flavor masquerade. Usually these dishes are heavy in sauces and require long cooking times to break down the texture and flavors which lends to the perception that they are of less quality. Believe it or not...Game meat is amazingly appetizing in its own right. Game is at its best when the cuts are right, the flavor is coaxed with the appropriate spices, and generally are prepared with much shorter cooking times. Trying to mask the flavors in an effort to invite interest generally ruins the meat and encourages the thought that game is a lesser meat when in reality the flavor and texture often surpass those of the packed farm variety. You would never try to pass lamb off as beef and you would never try to pass duck off for chicken...why would you do that with game? Please encourage the learning and acceptance for game rather than encouraging distaste by stating that game tastes like anything other than itself. Health benefits and respect for the animal are a topic for another time.
