Gluten free pasta salad with chilli chicken 250g gluten free pasta shells, cherry tomatoes, sugar snap peas sliced, capsicum sliced & alfalfa sprouts. Cook the pasta, drain, cool. Dress with olive oil, apple cider vinegar, lemon or lime juice & mayonnaise. Add veges. 4 free range chicken thighs, 2 fresh chillies, 2 tablespoons grated ginger, 1 tablespoon grated turmeric, 4-5 garlic cloves chopped or crushed, olive oil. Marinate thighs in spices & oil then bake at 180° for 25 to 30 mins. Rest, then slice and serve on top of pasta. Chicken can be served hot or cold with pasta salad.
