Going bananas.... over bananas!!! Seeing and reading so many recipes of cakes with bananas inspired this cake. But wanted something different too... So came up with this! This is my banana, strawberry & chocolate spread cake!! With chopped walnuts for that crunch with each bite... delicious!! This is what I did... I used: 4 ripe bananas 5-6 ripe strawberries 1 cup sugar 1/2 cup sunflower oil 1 cup milk blended with the strawberries & 2 bananas 2 large eggs 2 tsp. vanilla extract 3 cups all-purpose flour 2 1/2tsp. baking powder 1 1/2 tsp. baking soda 1/2 cup Nutella or any other brand chocolate spread 1/2 cup chopped walnuts For decorating I used 1 banana & a few strawberries First of all I sieved the flour , baking powder & baking soda three times in a large bowl. I have read that this makes a difference in the final product so wanted to try it out! Next, in a blender jar , I added 1 cup milk , the strawberries & 2 ripe bananas & blitzed them to get a nice milkshake! Had a few sips too... yummy! Pour this in a glass and keep aside. In the same blender jar I broke the eggs, added vanilla , oil & the sugar. Blitzed again till frothy. Added the milkshake to this egg-oil-sugar mix and gave it a final blitz. Poured this little by little over the sieved flour and mixed together till everything is incorporated. Mashed the leftover 2 bananas and mixed in the batter as well. Now I took the chocolate spread in a microwave safe bowl & microwaved for 20 seconds, just till it was nice and smooth. Poured half of it over the batter and swirled it around, trying to make a marble like pattern. I found the batter a little bit dry so added a few spoons of milk till the consistency was smooth, but not runny. Now I sprinkled 2 pinches of flour on the walnuts, tossed them till they were well coated and added this to the cake batter. Mixed lightly just to get the walnuts all over the batter. I preheated the oven at 180 degrees. Then greased my cake mould with some butter and flour, making sure that the entire mould is coated well. Poured all the batter in and just lightly tapped them on the kitchen platform to remove any air bubbles & so that the batter settles evenly. Lastly took the left over chocolate spread and poured it over the batter and with a skewer & swirled it around gently. Baked this in the middle rack at 200 degrees for 15 minutes and then at 180 degrees for another 20 minutes. The cake should be done when a skewer inserted in comes out clean. I let it cool and for a glossy look microwaved a few spoons of strawberry jam ( any jam/marmalade should do) with a little bit of water and applied this on the cake with a brush. Finally decorated with some sliced banana & strawberries! The cake was over before I could say banana!!!!😃😃
