Good Morning Team Awesome Well day is recoup 17 … what I can say; I felt so completely blessed and had a great day. We started out early to go to fortune bay it about an hour and a bit to get there. We arrived at 11. We were immediately welcomed by Chef Michael’s beautiful wife Chasity. She is a beautiful woman and welcomed us so fully it was nice. I mean you have to feel a little like a bother when he is taking time out of his very busy life to spend time with us. We went in and we were welcomed and we meet all the staff. The test kitchen is a lovely loft that has a beautiful view of the water; a very creative and inspirational spot…So typically they test recipes for 3 – 4 days a week. Chef Michael introduces all of his staff to us and it is very evident that he is very proud of all of his staff with all their individual duties and gifts. There is complete order and a wonderful working environment, how could there not be? So yesterday they were working on a salsa recipe, and it really is a group effort and a process. So they had a few mixed up and the tasting. We all gave our opinion. So we tried this and then tried that and then boom a decision is made, Chef Michael then signs off on it. He confirms the recipe, he check marks each ingredient with a green marker and makes and notes of things we did and what was changed. So we tried extra lime, it was no go, we removed adding any salt and then we decided to add more garlic to taste. So with the green checks, it is now an official recipe for the next cook book. And I got a jar of it given to us to take home. Don’t hate the players….lol so next they were working on a chicken breast three different ways, a full breast baked with tortillas crushed on it, salsa, and cheese, then a beaten breast pan seared and then another one another way I can’t remember. So we looked at the ratio of how the tortillas stick, crunch, cheese flavor and tastes of various other things that would appeal to kids moms and easy of prep etc. Then we went on to casa dais, which we didn’t really spend time on as it was not what he was looking for at all. At this time Chef Michael had other appointments so we loaded up and left. It was a wonderful morning and we chatted on passions, food, and the love of feeding people, and the joy of serving people. It was truly a wonderful morning. Chef Michael is so laid back and easy going how could I not have enjoyed the visit. It is nice to see such a really down to earth man whose passion is evident in everything he speaks of especially, family, PEI and food…. I was truly blessed to spend time with him. So after the visit I decided to go back to where I got my head henna’s there was a couple spots I just didn’t like and wanted changes so I was able to get an appointment and a little bit of a fix for me, so I am quite proud of how my head turned out, I am much happier she did an amazing job. Brad got me out to the car to leave and then all of a sudden he stated yelling a couple on the street, I was in instant fear of oh no who pissed him off now??? He kept yelling hey hey!!! Then finally the people stopped and guess what it was a couple that lives in Frankford randomly walking down the street. It was Joanne White and her hubby. They were over in Nova Scotia to get their son and decided to come to the island for a night. I found that it was strange that we would bump into someone so randomly... Small world…lol BTW I am going to go to the cancer center and show off what other possibilities could be done with the henna head. This might be just something that will help someone else with the transition. So today I am having lunch with the MP that has been in power for 25 years on the island, he is a friend of my dad’s and we see if he can enlighten us on the whole prescription bill thingy. I doubt it but who knows it doesnt hurt to shake on more tree. Lol Health wise I think Im feeling a little stronger. I feel a little less shaky and my vision is coming and going better. So hopefully feel I am on the upswing...
