Granny’s Tater Flitters 4 c. left over mashed potatoes 1 med onion chopped fine 2 lg. eggs ½ c. sour cream 1 c. flour if mix seems thin add ¼ c. more flour mixing well. Salt and pepper to taste Butter to fry with. Mix the first 6 ingredients in a mixing bowl. Using a non stick skillet over medium heat add 1 ½ tbs. butter. When butter has melted add 2 heaping tbs. of potato mix to the butter making a patty. Now add 2 more tbs. full for another patty and fry two at one time. Brown on both sides. Add butter to pan and make two more continuing to do so until all the mix has been used and formed into tatter flitters. Serve hot or cold. Enjoy.
