Great weekend already and were only halfway done. Taught a Fun private cooking class last night to celebrate a 50th birthday. 15 guest chefs in attendance- food and wine of Italy theme. To start roasted artichokes served with a side of Bosky Acres Goat Cheese, Dancing Bees Honey ( available att eh Matthews Community Farmers Market and orange zest. First course arrancini made with Uno Alla Volta smoked mozzarella and sauced with my homemade Marinara. Next came Romaine salad with local radishes from ColdWater Creek Farms and pomegranite; homemade from scratch ravioli with local butternut squash , Windcrest Farm Organics ginger and North Carolina apples in a tomato and sage butter sage. The entree was Porchetta stuffed with local spinach from Bells Best Berries and kale from @Coldwater creek farms, Windy Hill Farm sausage and local shiitakes; Nutella tiramisu topped with Savory Spice Shop • Charlotte • South End/Dilworth black onyx cocoa powder for dessert. Wine pairings for class by Josh Villapando of Assorted Table Wine Shoppe . Thanks to everyone who was there- it was a deliciously fun evening!! LynnErin McNeil Tyler
