Grilled Market Veggies (Summertime Goodness) After a long day at the Market, we enjoy an early dinner with our family. We are usually tired, hungry and have a lot of fresh produce in our kitchen to use. This dish has become one of our favorites. Sometimes we add 1/2 a grilled chicken (meat pulled off the bone and pasta, such as linguine or bow tie) Grill Basket Olive Oil ( infused with lemon, if possible) Or two fresh lemons A variety of fresh summer veggies , prepared and cut into similar sized pieces Whole cloves of garlic In separate bowl, halved cherry tomatoes or other variety cut into pieces Sea salt Fresh ground pepper Fresh chopped herbs such as thyme and basil Feta cheese Grilled chicken and pasta are optional Our favorite veggie mix has been - Red and Green Sweet Peppers, deseeded Red and Yellow Onions in thick rings or chunks A handful of cleaned whole garlic cloves Yellow squash and zucchini (cleaned, unpeeled, large chunks) Peeled eggplant, cut into large pieces 2 whole, cleaned ears of corn on the cob Put all of these veggies in a bowl, pour on some olive oil, and grated lemon peel and lemon juice, salt and pepper. While you make the BBQ fire, let the veggies sit. When fire is ready, put veggies in grill basket, put over hot coals and cover. Stir often and use a mitt and sturdy spoon or spatula. Put the corn on the cob on the grill and let it cook a bit. Sometimes we let the veggies char a bit and sometimes less. Cook to your preference and remove from grill. We have a large pasta platter that we like to use to serve these on. Put veggies in a large serving dish, toss with a little more olive oil, stir on fresh tomatoes, cut corn off cob and stir in as well. Add fresh chopped herbs. If you are going to serve with the grilled chicken and pasta, toss that all together at this time. Top with lots of feta and enjoy. These grilled veggies are great as a leftover, used to fill an omelet! Of course we only use farm fresh, local and seasonal...the veggies will change with the seasons.
