Grilled Pumpkin Asparagus Rocket Salad with Spicy Walnuts Ingredients ½ Pumpkin Sliced 2 bunches Asparagus 250g Rocket Caramelised balsamic Spicy walnuts 200gms Walnuts 1 teaspoon maple syrup ½ tablespoon brown sugar 50g butter 2 teaspoons Cayenne Pepper Step 1: Place all ingredients for spicy walnuts into a frying pan at a low heat until caramelised then set aside to cool. Step 2: Sear Pumpkin and Asparagus on the char grill creating a char texture Step 3: Toss Rocket with olive oil and season serve with Asparagus and finish with nuts and swirl your caramelized Balsamic creating your salad.
