Grilled eggplant(Baigani) in lolo or coconut milk: 4 eggplants 1 tsp salt 2 tbsp lemon juice 1 cup coconut cream (unsweetened) 1 medium chopped onions chopped chilli to taste 1 tbsp sliced tomatoes Directions: Heat the grille on the stove. Place the eggplants on the grille. When cooked take out the eggplants. Peel off the skin or otherwise. It can be left as it is. Shred into thin strips using a fork. Mix together with lemon juice, coconut cream, onions, tomatoes and chilli. Then Pour over eggplants. Note: eggplants can also be cooked over the hot coals (tavu) of an open wood fire. We like to call it baigani tavu......
